How It Works

The Canning & Preserving Calculator estimates how many jars you can fill from a given amount of fresh produce, the recommended processing time for safe preservation, and the additional ingredients typically needed.

Features

Canning Methods
  • Water bath canning: Suitable for high-acid foods (fruits, jams, pickles, tomatoes with added acid). Uses boiling water at 212°F (100°C).
  • Pressure canning: Required for low-acid foods (most vegetables, meats). Uses pressurized steam at 240°F (116°C).
Altitude Adjustments

At higher elevations, water boils at a lower temperature. Water bath processing times increase by 5 minutes at 1,001–3,000 ft, 10 minutes at 3,001–6,000 ft, and 15 minutes above 6,000 ft. Pressure canning increases by 1 PSI per altitude tier above 1,000 ft.
